Come to Cheeses! - Wine & Cheese Pairing
Ah, those two fermented wonders of the world: is anything more tried and true than wine and cheese pairing? Find out for yourself as we highlight a selection of wines from around the world with their classic cheese BFFs and other cheese-based dishes. Why bother to pair them? Because they make each other taste better, of course, and we'll explain how. We’ll also demonstrate that not all cheese and wine combos are necessarily matches made in heaven. We featured cheese dishes (and wines) aplenty at last night’s Wine, Food, Wine! event, with a lovely crowd in attendance. Favorite was the extremely rare and expensive Swiss Alpine Hippo’s Milk Cheese with a few close runners up:
- The biggest food-wine change came when the rich Argentinean Felino Chardonnay (Red and White, 22.00 chf) mellowed markedly with Camembert with Caramelized Onion Chutney.
- While big red wines often clash with cheese, some styles are custom built for it: a bright Chianti Classico (Tuscany) from San Giusto a Rentennano (Caratello, 22.50 chf) saw its acidity and tannin reduced and fruit popped with Three-Cheese Lasagna .
